Squeeze grated onion through cheesecloth to drain.

Crumble saffron into melted butter.

  • 2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp ground turmeric
  • 1/4 tsp paprika
  • 1 pinch saffron threads
  • 1 tbsp butter, melted
  • ground sumac & lemon wedges (optional garnish)

Instructions

Squeeze grated onion through cheesecloth to drain. Mix onion, spices, and meat, and form into 8 logs. Crumble saffron into melted butter; use this mixture to baste kebabs while grilling.
