- 1/2 tsp1.2 g fresh ground pepper
Protein
- 1 lb455 g ground meat Lamb, beef, chicken thighs, or another chosen meat.
- 1 egg lightly beaten
Dry goods
- 1/4 cup27 g dry bread crumbs
Liquids + fats
- 1 tbsp14 g butter melted
Other
- 1 clove garlic peeled and finely chopped
- 1/2 tsp1.5 g ground turmeric
- 1/4 tsp0.6 g paprika
- 1 pinch saffron threads

Mix onion, spices, and meat.

Ingredients
- large yellow onion, peeled and grated
- 1 lb ground meat (lamb, beef, chicken thighs, whatever)
- 1 clove garlic peeled and finely chopped
- 1 egg, lightly beaten
- 1/4 cup dry bread crumbs
- 2 tsp salt
- 1/2 tsp fresh ground pepper
- 1/2 tsp ground turmeric
- 1/4 tsp paprika
- 1 pinch saffron threads
- 1 tbsp butter, melted
- ground sumac & lemon wedges (optional garnish)
Instructions
Squeeze grated onion through cheesecloth to drain. Mix onion, spices, and meat, and form into 8 logs. Crumble saffron into melted butter; use this mixture to baste kebabs while grilling.
